I'm very interested to see what it's going to be like. I'm always on the lookout for new places, and in my never ending quest to find the best burger in Bury.

I think there is a massive gap, especially during the day, for somewhere that makes decent, high class sandwiches - not M&S style or the sort of thing you'd get from one of the many sandwich shops. It would make such a difference from the chain dominated coffee shops that are one of the only places to go for a 30minute lunch. Please no pre-packed paninis....they've been so overdone!

I like the idea of a high class sandwich place. There is nowhere that specialises in really good hand made sandwiches at lunch time.

So true. What is it with paninis? They seem to be everywhere. My best advice is don't go down the normal cafe route, there are too many coffee shops in the town and the Saints building doesn't have the space to compete. Set yourself apart...top notch sandwiches could be a way to go (open ones, clubs etc),

Sorry it has taken me so long to respond to some of the questions , but I have been busy getting myself dirty and dusty ready for our opening on Friday 5th feb'.
The food will be based around great ciabatta's and focaccia's and some hand cut sliced breads.
For the cold winter days we will also be cooking our own soups/stews and chilli's.
All our food will be prepped and cooked in our little tiny kitchen by ourselves with our little tiny hands. Coffee and tea will be something we are quite serious about , so we are using a great coffee roasters that deliver a great bean.The tea is also a brand we are quite proud to use. ( when I say serious I mean care in a lovely way and not scrunched face style )
The decor and music we have taken a lot of time thinking about so I like to think we are getting it pretty close to what we wanted but this could also be quite organic.
Art, we are looking into so if anybody thinks they are quite good please show me what you got (please no finger/blow/kitten paw/monkey art as we have to think of hygiene)
So great food in lovely and friendly atmosphere is what we hope to achieve.

Sounds good. You're right about good coffee being important: with 50m in each direction are Caffe Nero and The Lounge, both of which serve excellent coffee.

One plea: please please please don't put a grocer's apostrophe on your signs: with Groucho the sign in the door had one and it bugged me every time I saw it when I walked past.
